Easy pesto recipe! Put on pasta, sandwiches, crackers, veggies- really anything!

2 cups (4oz), tightly packed, of fresh basil
1/4 cup pumpkin seeds (or pine nuts, really any nut)
1/4 cup nutritional yeast
juice from 1/2 a lemon
3 garlic cloves (or if you’re like me and use pre-minced, 3 teaspoons)
1/4 teaspoon salt
1/2- 3/4 cup olive oil

Preheat oven to 375-400 degrees. Toast pumpkin seeds in oven for 2-3 min.

Combine basil, pumpkin seeds, nutritional yeast, lemon juice, garlic and salt in a food processor. Gradually add in the olive oil. Taste and add more olive oil or salt depending on how you like it! More olive oil if you prefer thinner pesto. Also for creamier consistency, add half an avocado.
