Super Easy Veganized Pancakes

Ingredients

makes three pancakes

1 cup pancake mix (I used Trader Joe’s)
1/2 a banana
3/4 cups water
1/4 tsp vanilla extract
1/4 tsp cinnamon
1 tsp coconut oil (or any cooking oil)

Mash banana in a bowl and mix in pancake mix. Gradually add in water, de-lumping the batter. Add vanilla extract and cinnamon. Heat oil in a skillet on medium high. Wait till pan is hot before you add the mix!! Add mix and reduce heat to medium/medium low. When the pancake’s air bubbles pop, but don’t refill with batter, flip. And then wait about two minutes on the other side.

This recipe has given me flawless pancakes three times now! And as someone who has grown up making pancakes and never quite got them right, I’m super stoked on this! Enjoy!
