Sweet Potato and Corn Tacos
Ingredients
1 sweet potato- diced small
2 1/2 tbsp olive oil (or choice oil)
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon chili powder
salt and pepper
1/2 cup frozen corn
tortillas
Toppings: lime, guacamole, salsa, tomatoes
Preheat oven to 425 degrees. Place sweet potatoes on a baking sheet and cover in 2 tbsp olive oil and half of the seasonings called. Bake for 20 minutes. On the other quarter of the baking sheet add the corn and 1/2 tbsp of olive oil and the other half of the seasonings. Bake for another 20-30 min. While baking, wrap the tortillas in foil and have them join the party in the oven for about 10 minutes or until soft.
When everything is cooked, create your taco and enjoy! Super simple yummy vegan dinner and leftovers can be used for lunch or tossed in a salad! This would probably make 6 small tacos
