Veggie Mac N' Cheese
Ingredients
1 sweet potato peeled and diced
2 carrots peeled and diced
Half a yellow onion diced
2 cloves garlic
4 tbsp nutritional yeast
1 tsp of salt
1/4-1/2 tsp of paprika
red chili pepper flakes to top
Boil sweet potato, carrots, and onion until soft. The softer the vegetables, the easier to blend! Drain the veggies, saving 1 1/2 cups of boiled water. Add the vegetables and garlic to a blender and blend, gradually adding in the water until smooth. Add in the seasoning and continue blending. Once the sauce tastes how you like, pour over your pasta! Keeps in the fridge. To reheat just put in a pot with a little bit of hot water to loosen the sauce.
